We had a CED player when I was a kid, and I recently ran accross a working one with about 100 disks for a decent price. I have a big problem that I can't seem to find info on, we absolutely need closed captioning in my house. Will regular closed captioning on a modern tv work with the CED player?

Yes, as long as it still has analog closed-caption decoding. The TV needs to get the signal through the Video In jack unprocessed- my stuff is hooked through a receiver with HDMI, but when I want to see captions from tapes or discs I switch to the regular Video Out jack from the receiver and turn all video processing off- with it on, it creates a new vertical blanking interval and wipes out the caption signal.
Interestingly, some Blu-Ray discs have traditional closed-captioning, but the only way to see them is to set the player's output to 480i which means you'll be watching the picture down-rezzed.
BTW- here is my LCD TV showing a recording from ABC in 1980, where they were running a demo loop on the closed-caption signal!
